VICKY’S RECIPES
Minnesota Pumpkin Dessert
Ingredients:
First Layer (crust):
1 cup Bisquick
½ cup Quick oatmeal
½ cup Brown sugar
¼ cup Butter
Mix Bisquick, oatmeal, and brown sugar. Cut in butter until crumbly. Press into 9×12 baking dish. Bake 10 minutes. Cool slightly
Second Layer:
1 can (16 oz.) Pumpkin
1 can Evaporated milk
2 Eggs
½ tsp. Salt
¾ cup White sugar
½ tsp. Ginger
1 tsp. Cinnamon
¼ tsp. Ground cloves
Mix together and pour over crust. Bake 20 minutes.
Topping:
½ cup Chopped nuts (or pecans)
½ cup Brown sugar
2 Tbsp. Butter (firm)
Mix until crumbly. Sprinkle over second layer. Bake for 15-20 minutes.
